I make Wooden Latches with two laminated cross grain pieces of solid wood. These custom made wooden latches can be the same wood or contrasting wood types.
I start with two pieces of wood about 1/4" thick. Then I cut a groove in the face of each the same distance from the top edge as each piece thickness. Glue and clamp the to cross grained pieces together, making sure the groove edges are flush. Sand the glued edges flush, and use and adhesive to add paper to the top side, that will be seen when the latch is later is installed. Use a square and compass to draw the latch size of your choice.
Here's a video of the process.
